How to grow: Sow direct outdoors Feb–May in deep, stone-free soil. Sow thinly, 1 cm deep, in rows 30 cm apart. Keep soil moist, as parsnip seeds can be slow to germinate. Thin seedlings to 10 cm apart for best root size. Leave roots in the ground until needed. Flavour sweetens after frost.
Cooking / usage ideas: Perfect roasted, mashed, or added to soups and casseroles. Sweet, earthy taste makes a great winter comfort food.
