The Hawthorn is an under rated herb. Each year I collect Hawthorn berries and leaves. The berries and leaves are dried in our dehydrator and then powdered as a medicine. I spread them on food or cereal. The Hawthorn is full of vitamins and minerals and modern research has shown that if taken regularly, Hawthorn is good for the circulation and heart. It has no harmful side effects. I also make Hawthorn ketchup from berries which is delicious on food and good for you. Nature’s larder is wonderful!
Ingredients
- 3 cups of hawthorn berries, seeds in
- 1cup of apple cider vinegar
- 1/2 cup of water
- 1/2 cup of sugar
- 1/2 teaspoon of salt and pepper and any other spices you like
Method
- boil hawthorn berries in vinegar and water – after 30 mins or so they will swell and split and go soft
- strain through fine strainer. with a wooden spoon, crush the pulp from the berries through the strainer
- add salt and pepper, ground mixed spice etc or some chilli if you like hot stuff!
- mix in the sugar and boil until it reduces to ketchup consistency
