How to grow: Sow direct outdoors Feb–May in deeply dug, stone-free soil. Sow thinly, 1 cm deep, in rows 30 cm apart. Keep soil moist during germination (which can be slow). Thin seedlings to 10 cm apart. Leave roots in the ground until needed. Flavour improves after frost.

Cooking / usage ideas: Delicious roasted, mashed, or added to soups and stews. Sweet flavour intensifies in colder weather.
